22.50 ml | Lemon Juice |
22.50 ml | Honey Syrup* |
1 | Egg White |
2 dashes | Orange Bitters |
1 Dash | Angostura Bitters |

In a cocktail shaker, add all ingredients including bitters and egg white. Close shaker tins and shake to make egg white expand. Add ice and shake to chill until tin is cold. Strain into a coupe glass and garnish with three drops of Angostura bitters and bee pollen.
*To make honey syrup, add 2 parts honey and 1 part water into a small saucepan over medium heat. Stir until the honey is dissolved. Allow to cool and transfer to an airtight container.
